These bars are adapted from Cleanfoodcrush’s Almond Joy Bars
Coconut Cashew Chocolate Bars
My Jonnie babe wanted to make a treat last night so I rummaged through @Cleanfoodcrush’s new Hawt Chocolate Recipe book and found her Almond Joy Bars. These babies were delish and totally hit the spot! And so simple! We didn’t have almonds, thus the Coconut Cashew Bars came to life!
Instructions
- Preheat oven 350 f
- Spray 8×8 tart or bar pan with coconut oil spray or coat lightly with melted coconut oil
- Combine2 cups unsweetened shredded coconut 3 large egg whites 1 tsp vanilla extract 1 tsp liquid stevia or 8 packets stevia (we used purevia)
- Press very firmly into the bottom of pan
- Bake about 14 minutes, until edges are golden and middle is set.
- Let cool. Melt 1/2 cup dark chocolate/cacao with 1 tbsp coconut oil, pour over cooked coconut, sprinkle with chopped cashews.
- Set in freezer for a few minutes if needed to harden chocolate.
- Slice into bars ♥
