This is our favorite whole wheat sandwich bread and it makes THE yummiest toast for breakfast too!
If you’re looking for a healthy bread machine recipe and are milling your own wheat berries, this is for you! Using a bread machine saves so much time, especially for a busy family like ours. Just toss all the ingredients into the bread maker, and in a few hours, you’ll have a fresh homemade loaf full of dense nutrition from the freshly milled flour ready to enjoy.
Making Freshly Milled Flour
When I grind my own flour, my family gets everything from the whole grain. The outer part (bran) has lots of fiber, magnesium, B vitamins like thiamine and niacin, plus minerals like iron and zinc. The germ (seed) is packed with B vitamins and important minerals too. The middle layer (endosperm) has protein, carbs, and some B vitamins, iron, and fiber. To do this, you’ll need a grain mill. It a bit of an investment, but let me tell you, it’s worth it.
This bread still contains gluten, so it’s important to be aware of that. However, many people find they react differently to grains that are freshly milled at home compared to store-bought white flour or “whole wheat” bread. The reason is that when you mill your own grains, you’re using the entire grain—nothing is taken out. Store-bought breads and flours undergo heavy processing where parts of the grain are removed to make them last longer on shelves. We are all about the freshly milled flour in our home!!

Favorite Bread Machine Sandwich Bread Recipe w/ Freshly Milled Flour
Equipment
- 1 electric grain mill
- 1 bread machine
Ingredients
- 1.5 cups warm water
- 2 tsp. salt
- 1/3 cup olive oil
- 1/3 cup honey
- 1 egg
- 1 tbsp sunflower lecithin
- 1 tsp. vital wheat gluten
- 4-4.5 cups of freshly milled wheat (I do 3 cups hard white; 1.5 cups hard red)
- 1 tbsp instant yeast (slightly less than 1 Tbsp)
- 1/2 cup sunflower seeds (optional)
Instructions
- Step 1: Add all of the ingredients into the bread machine pan in the order they are listed. After adding the flour, make a small "well" in the flour and add the instant yeast inside.
- Step 2: Set your bread machine manually to follow these settings: Preheat: 18 minutes, knead – 20 minutes, rise 1 – 45 minutes, rise 2 – 20 minutes(if you are having issues with your loaf rising too high and then falling once it’s baked, reduce your rise 2 time. Mine is currently set at 12 minutes.), Rise 3 – off, bake – 45 minutes, keep warm – off
- Step 3: Remove from bread machine, let cool and enjoy!
